Traditional forced rhubarb production in the Rhubarb Triangle

Yorkshire Forced Rhubarb has been grown in special forcing sheds in an area known as the 'Rhubarb Triangle' since 1877. The technique involves growing the rhubarb outdoors for a period of two years in order to allow frost to toughen the roots, after which time the plants are brought indoors into darkened heated 'forcing sheds,' where the warmth forces the rhubarb to grow quickly in search of light. The rhubarb is hand harvested by candlelight to prevent the plants from producing chlorophyll, which would cause sugars to move from the roots into the leaves. The technique of forcing rhubarb results in a very pink, tender, sweet vegetable, which has attained Protected Designation of Origin status like Champagne, Gorgonzola Cheese or Parma Ham.
