GUINNESS WORLD RECORDS™ title “Kiwami OMAKASE Course”

· Record title : Most expensive sushi · Certificate award ceremony : August 7, 2023 · Achievement location : Sushi Kirimon (1-1-20 Dojima, Kita-ku, Osaka, Japan) · Price : 350,000 yen (tax and service charge included) · Content : 20 pieces of nigiri sushi

Sushi Kirimon respects Japanese traditional sushi culture and has a mission to pass it on to the world. The “Kiwami OMAKASE Course”, which was certified by GUINNESS WORLD RECORDS, is a symbol of our mission and embodies the originality and excellence of Sushi Kirimon.

This course is simple, with 20 pieces of nigiri sushi which is particular about the origin of sushi, and combines carefully selected top-quality ingredients with skilled craftsmanship to deliver an extraordinary dining experience.

Commitment to Ingredients

Particularly rare ingredients include the finest tuna with a price of over 40,000 yen per kilogram, sea urchin with a price of over 100,000 yen per sheet, and large beluga caviar with a price of 50,000 yen per 50g. These ingredients are carefully prepared and become sushi toppings. (*Note: Seafood prices fluctuate daily, so prices may vary based on the day's market rates.)

The temperature of the red and white rice is adjusted to the appropriate temperature for each sushi topping, and multiple types of selected wasabi and soy sauce, such as kioke soy sauce (soy sauce fermented in a wooden bucket), are used separately for each ingredient.

Sushi delicately made by sushi chefs has the freshness, beauty, and transcendent taste befitting the finest sushi.

The Master Sushi Chef's Path

Sushi Kirimon's head chef, Naoyuki Setta, travels to fishing grounds and ingredient sources all over Japan, carefully selecting ingredients and preparing them with the thoughts and wishes of the fishermen and producers he meets along the way.

He has also trained at numerous renowned and Michelin-starred sushi restaurants in Tokyo, Kyoto, and Osaka, dedicating over 25 years of his life to the world of sushi. Through years of training and experience, he pursues technique and tradition, advancing his own path in the world of sushi.
