South Korean food-tech startup Gopizza is betting on artificial intelligence (AI) technology and its single-serving pizza concept to rise as a global market leader.

Founder and CEO Jay Lim, once indifferent to pizza, has built the company into a chain of more than 1,200 outlets worldwide by combining food-tech innovation with a niche strategy.

“We are not just a pizza company,” Lim said in a recent interview. “We established a system where anyone can make pizzas easily using AI technology. We are confident that Gopizza can grow into the world’s No. 1 single-serve pizza brand.”

The idea took root in 2017, when Lim questioned why pizza could not be as accessible and convenient as fast-food burgers. To understand the market, he worked at franchise pizza shops, observing every stage of preparation and identifying demand for a quick, affordable, single-serving pizza. After a year of trials, he launched Gopizza through a food truck before scaling into a global brand.

A key to its success lies in food-tech infrastructure.

Gopizza uses par-baked dough, partially baked bases managed from ingredient sourcing to logistics, ensuring consistent taste and texture across locations.

Its proprietary GOVEN, an AI-powered oven, maintains optimal temperature automatically, while the AI Smart Topping Table recognizes ingredients in real time, enabling uniform quality pizzas in just three minutes regardless of the cook’s experience.

Government support also played a role.

In 2023, Gopizza was selected for the Ministry of SMEs and Startups’ Pre-Unicorn Special Guarantee program, securing 3.1 billion won ($2.3 million) in technology-backed financing.

The funds strengthened Gopizza’s overseas expansion, R&D, automation systems, and quality management.

“Time is the most critical factor for startups, and the guarantee allowed us to secure capital quickly and reliably,” Lim said.

Lim emphasized that Gopizza’s ultimate mission is global accessibility.

“Our goal is to make Gopizza available to everyone, everywhere,” he said.
